Ingredients: – 1 pound of smoked sausage, sliced – 1 pound of boneless, skinless chicken thighs, cut into bite-size pieces – 1 large onion, chopped – 1 large bell pepper, chopped – 2 celery stalks, chopped – 4 cloves of garlic, minced – 2 cups of long-grain white rice – 4 cups of chicken broth – 1 can of diced tomatoes, drained – 1 tablespoon of Worcestershire sauce – 2 teaspoons of Cajun seasoning – 1 teaspoon of dried thyme – 1/2 teaspoon of cayenne pepper – Salt and black pepper to taste – Green onions, chopped (optional)
Instructions: 1. In a large Dutch oven or a heavy pot, cook the sliced sausage over medium heat until browned. Remove the sausage from the pot and set it aside. 2. Add the chicken to the pot and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set it aside.
3. In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are soft, about 5 minutes. 4. Add the rice to the pot and stir until it is coated with the vegetable mixture. 5. Pour in the chicken broth, diced tomatoes, Worcestershire sauce, Cajun seasoning, thyme, cayenne pepper, salt, and black pepper. Stir to combine.
